  1. 1. Applying the Theory of Planned Behaviour to Predict the Consumption of Meat Analogues

    Master-uppsats, Göteborgs universitet/Graduate School

    Författare :Alexej Mikus; Milena Conny Annika Desch; [2022-08-04]
    Nyckelord :Theory of Planned Behaviour TPB ; meat analogues; perceived sensory attributes; food curiosity; brand trust; consumer intention; consumer behaviour; sustainable consumption; food consumption; confirmatory factor analysis; structural equation modelling; binary logistic regression;

    Sammanfattning : The increasing trend to consciously reduce meat consumption is accompanied by a strong growth in the supply and demand of meat analogue products. This study aims to predict the consumer intention to consume plant-based meat analogues based on an extension of Ajzen’s (1991) theory of planned behaviour (TPB) with the four factors: perceived sensory attributes, brand trust, food curiosity, and socio-demographic characteristics and lifestyle determinants. 2. 2. Development of a Flexitarian food product : The Flexi hot dog

    Master-uppsats, SLU/Department of Molecular Sciences

    Författare :Valli Tirounavoucarassou; [2022]
    Nyckelord :flexitarian; diets; carbon footprint; sensory evaluation; consumer preferences; nutrient assessment;

    Sammanfattning : Many studies show that plant-based diets are good for both human health and the environment and recommend lowering meat intake considering mounting environmental and animal welfare issues. This facet prompted protein transitions around the world, which in turn aided in the emergence of various diets. LÄS MER

  3. 3. Development and examination of liquid plant-based young child formulae

    Master-uppsats, Lunds universitet/Innovation

    Författare :Irineos Georgiou; [2021]
    Nyckelord :Technology and Engineering;

    Sammanfattning : This study evaluated the pilot-scale rapid-prototyping development of liquid plant-based young child formulae, by exploring different sources of proteins, carbohydrates, lipids, and flavours. The study was undertaken in collaboration with an industrial partner thus confidential information was blinded. LÄS MER

  4. 4. How do we make make Swedish consumers adhere to a plant-based diet? : An exploratory study on how companies in the food industry can influence flexitarians in the transition towards a plant-based diet.

    Kandidat-uppsats, Högskolan i Jönköping/IHH, Företagsekonomi

    Författare :Karoline Røsand; Alice Moradian; [2019]
    Nyckelord :Sustainability; food industry; plant-based diets; plant-based substitutes; flexitarian; meat substitute; dairy substitute; consumer behaviour and marketing;

    Sammanfattning : The purpose of this qualitative research paper was to explore how companies who offer plant-based meat and dairy substitutes in the Swedish market, can influence flexitarians towards a more plant-based diet. This was based on the conflict between the need to substitute animal products with more plant-based alternatives and the current resistance among consumers to change from traditional eating patterns. 5. 5. How do edible insects fly among Swedish consumers? : Exploring consumers’ evaluation of edible insects as a meat substitute

    Kandidat-uppsats, Högskolan i Jönköping/IHH, Företagsekonomi

    Författare :Hanna Johansson; Johanna Gustafsson; [2018]
    Nyckelord :Edible insects; Postmodernism; Environmental identity; Green consumerism; Meat substitutes; Flexitarian; Vegetarian;

    Sammanfattning : Purpose: The purpose of this qualitative research paper was to explore how consumers with an environmental identity evaluate new, environmentally friendly substitutes for meat, with edible insects given as an example. Problem: An increasing number of Swedish consumers show an overall negative attitude towards consuming meat, mainly due to environmental concerns, and express this by identifying themselves as vegetarians or flexitarian.
