   Sammanfattning : Hur mycket kroppen tillgodogör sig av metallinnehållet i bröd kan relateras till produktionen av spannmålet som blir mjöl, fullkornsmängd, bakmetod och spjälkningen av brödet i kroppen. Syftet med denna studie var att undersöka totalhalt av metaller i bröd och biotillgänglig halt av metaller efter spjälkning i magsäck och tolvfingertarm utifrån följande frågor: i) Finns det ett samband mellan totalhalt och biotillgänglig halt av metallerna i bröden? ii) Finns det ett direkt samband mellan totalhalt av metallerna och fullkornsmängd i bröden? iii) Ökar surdeg som hävningsmedel biotillgängligheten av metallerna i bröden? iv) Hur relaterar brödens totalhalter till dagligt rekommenderat intag av metallerna, samt tolerabelt veckointag gällande kadmium? Metallerna som undersöktes var magnesium (Mg), kalcium (Ca), järn (Fe), koppar (Cu), zink (Zn) och kadmium (Cd) och bröden som studerades var dels surdegsbröd bakade på kultursorter av vete och råg, dels några av de mest konsumerade bröden i Sverige.
