Utbudet av vegetariska och veganska livsmedelsprodukter på den svenska marknaden : vilka produkter finns och hur är de berikade?

Sammanfattning: This study has been done in order to map the supply of vegetarian and vegan food products in Sweden for business clients and consumers. A total of 665 food stuffs were found and classified into six categories. The biggest category was meat substitutes with 302 products and the second largest category was sandwich spreads with 150 different products. Within the remaining categories a varied number of products were found; 86 beverages, 64 cooking accessories, 34 milk free ice creams and 29 plant based yogurts. Of the meat substitutes were 28 only available for business clients. The products have been found by visiting grocery stores, food producers’ web pages and by phone calls to wholesale dealers.The fortified products that were found during the mapping were examined with particular interest and a discussion about the extent of the fortification and the relevance of the fortification levels has taken place. Approximately half, 48 %, of the plant based yogurts and 56 % of the beverages were fortified but no fortification of meat substitutes or milk free ice creams was seen. The total proportion of fortified products within the categories cooking accessories and sandwich spreads were low. Only 12 % of the sandwich spreads and 5 % of the cooking accessories were fortified. The category sandwich spreads includes margarines and 81 % of the margarines were fortified. Desserts where included in the category cooking accessories and 23 % of the desserts contained added nutrients. Five nutrients, vitamin B12, vitamin D, calcium, omega-3 fatty acids and zinc, have after a literature review been identified as nutrients that vegetarians and vegans should pay attention to to make sure that they are taken up in sufficient amount from the diet. During the examination of the supply no products fortified with long-chained omega-3 fatty acids (EPA or DHA) or zinc were found. However 35 products fortified with vitamin B12, 48 products fortified with vitamin D2 or D3 and 65 products fortified with calcium (CaCO3, Ca3(PO4)2, calcium hydrogen phosphate dihydrate and/or the seaweed Lithothamnium calcareum) were found.
