Serviceförvaltningen i Malmö önskade att hygienkunskaperna hos restaurangbiträden inom Malmö skolrestauranger också skulle undersökas, men på grund av att svarsfrekvensen hos restaurangbiträden var för låg, analyseras och utvärderas endast kockarnas svarsalternativ.
