1. Developing a protocol for 3D-printable bioink from decellularised porcine tissue
Master-uppsats, Lunds universitet/Livsmedelsteknik och nutrition (master)Sammanfattning : T-cell administration via a scaffold is a promising tool for treatment of inoperable solid tumours. Traditional scaffold materials lack the complexity of the extracellular matrix (ECM) that cells normally grow in. An alternative is to instead use decellularised ECM (dECM) from biological tissue to create the scaffold. LÄS MER
2. Swedish “tofu” from faba beans : a textural and structural analysis
Kandidat-uppsats, SLU/Department of Molecular SciencesSammanfattning : Tofu, a traditional soybean product, is a popular plant-based alternative which could potentially be produced from Swedish-grown faba beans (Vicia faba L.). The aim of this project was to asses the viability of producing a tofu-like faba bean product using food grade gypsum (calcium sulphate) as coagulant. LÄS MER
3. Exploring the Potential Plant Proteins as Structuring Agents: Designing Plant Based Alternatives to Dairy Products
4. A comparative study of innovation rennets from Swedish ruminants: calves, kids, and lambs
Master-uppsats, SLU/Department of Molecular SciencesSammanfattning : The study aimed to examine Swedish innovation rennets (lamb and kid) and bovine rennets (pepsin and chymosin) in combination with species-specific milk from goat, sheep, and cow. This was accomplished by evaluating the gross composition, casein and whey protein content, casein number of the milk types, as well as rheological properties, such as curd yield, coagulation time, and gel firmness. 5. Injectable and shape-retaining collagen hydrogel, crosslinked using bio-orthogonal cycloaddition chemistry
